Farm Fresh Raw Vegetable Slices with Beet and Scallion Raita

For 4- 6 servings of  Beet and Scallion Raita:

3 medium beets
2 cups plain yogurt, whisked til smooth
4 - 6  scallions, minced
1 teaspoon fresh minced garlic (scapes, green garlic, or garlic bulb)
1  small hot green pepper: optional
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons finely chopped cilantro

Bring the whole beets to a boil in a pan with water, then simmer for 15 minutes.

Let cool, peel and chop finely. Set aside one tablespoon for garnish.

Place the yogurt in a serving dish and mix in the beets, scallions, garlic, hot pepper(optional) , salt and black pepper.

Garnish with reserved cilantro and beets, and serve.
