Greens 'n' Beans

•               Large bunch of kale, washed, leaves stripped from stems and ripped/cut into smaller pieces

•               1 large clove garlic, crushed or minced

•               Bread crumbs (maybe 1/2 cup to 3/4 cup or to taste)

•               1 can of northern beans, rinsed/drained

•               Olive oil

•               Sea salt

•               Pepper

•               Dressing: 1/3 c lemon juice and 1/2 c olive oil. Dress greens to taste (you'll have leftover dressing).

Put 1/2 inch water or so in pot and steam greens. Meanwhile, sauté garlic in large pan with olive oil; when garlic is fragrant, add breadcrumbs. (You can also do these separately but I find easier to just keep all in same pan). The breadcrumbs will soak up remaining oil, heat til they are nice golden brown and remove from heat. When kale is tender but still bright green, drain the cooking water. Mix breadcrumb/garlic mixture with beans before adding both to the drained greens. Salt/pepper to taste.
